    In just 30 minutes of time, these Keto Apple Muffins are going to be hot and ready to eat! The delicious flavor of fresh apples paired with the flavor of cinnamon makes this one of the best fall muffin recipes, ever. They have only 4.7 net carbs despite being full of real apples.

    Can we all just agree that warm muffins taste the best? Not only are homemade muffins perfect for breakfast but keto apple muffins are a great mid-day snack or even an after-dinner treat, too.

    The more that you can make muffins, the better! In my house, muffins are something that the kids crave constantly and ask for because they love being able to grab one as they're running through the kitchen and eating on the fly.

    They are also big fans of these Keto Pumpkin Muffins as well as these Keto Chocolate Chip Muffins as well. When you get muffins that are sweet and can pass as treats - why not make them all the time?

    Ingredients Needed

    • Almond flour - This adds such a great flavor to this muffin recipe.
    • Coconut flour - I love using coconut flour because it adds the perfect hint of sweetness.
    • Joy Filled Eats Sweetener - This simple sweetener blend of xylitol, erythritol, and stevia is one of my favorites to use in most of my baking recipes.
    • Cinnamon - A hint of cinnamon brings in that fall flavoring.
    • Baking powder - Don't leave this out as it gives the muffins the texture that we all love.
    • Salt - Just a pinch.
    • Butter - If you would like to make these keto apple muffins dairy free sub in refined coconut oil for the butter.
    • Sour cream - This could also be swapped out with unflavored Greek yogurt or coconut cream for a dairy free muffin.
    • Eggs - The eggs are the binding agent in this simple muffin recipe.
    • Vanilla - Vanilla extract enhances the other flavors in baked goods. So even if you don't want something to be vanilla flavored it is an essential ingredient.
    • Apples - Use whatever type of apples that you love or whatever you have in the house that needs to be used up.

    How To Make Keto Apple Muffins

    This is a basic low carb almond flour muffin recipe that mixes up in minutes with just a medium bowl and a wooden spoon.

    Step 1: Preheat the oven to 350. Put paper liners in 8 holes of a standard muffin tin. Grease the muffin liners by spraying with cooking spray.

    Step 2: Stir together the first 6 dry ingredients. Add the wet ingredients and mix well. Fold the apples into the almond flour mixture.

    Step 3: Divide the batter between the prepared muffin pan. I normally use an extra-large cookie scoop when making cupcakes or muffins.

    Step 4: Bake the keto apple muffins for 25-30 minutes. You want the muffins to feel firm to the touch and be golden brown.

    Variations & Substitutions

    Nuts - You can also add some chopped pecans or walnuts to the top of these low carb keto apple muffins as well.

    Chocolate - I'm a big believer that chocolate fixes everything so some white chocolate chips might be just perfect.

    Apple Pie Spice - I love cinnamon on its own but if you want to sub in some apple spice go for it!

    Crumb Topping - Make the crumble I have included with my keto coffee cake muffins and sprinkle it on top before baking.

    Vanilla Glaze - After the muffins have cooled mix powdered sweetener with a tiny bit of heavy cream and a drop of vanilla. Drizzle over the cooled muffins.

    Fruit - Feel free to sub in blueberries, raspberries, chopped strawberries, or cranberries for some or all of the apples.

    Common Questions

    What apples work best for baking?

    There are a few studies out there that dive into this a bit more but I really do believe that you have to bake these muffins with whatever apples make you and your tastebuds happy.

    I love the sweetness of Gala apples and they tend to have a great texture for muffins. if you like something a bit more tart, Granny Smith apples might be perfect as well.

    Are apples keto?

    In general, apples are not keto. But I do believe that using a small amount of an ingredient with a higher carbohydrate count is fine when it is divided between an entire recipe. Apples are a good source of fiber so that makes them an ok choice in moderation. There are about 20 net carbs in a whole apple so using 1-2 apples in a recipe that has 4-8 servings is very reasonable.

    I use this reasoning in my Apple Cider Donut Cake and Keto Apple Cake as well.

    Do I have to peel the apples?

    For this recipe, yes. You need to wash the apples well, then core them and peel them and chop them into bite-sized chunks.

    If you don't peel them, the apple skin might add a texture that takes away from the rest of the muffins.

    How do I know the muffins are done baking?

    For the most part, you're going to know by being able to smell them and also by looking at them and seeing that the tops of golden-brown.

    You can also take a butter knife or a toothpick and insert it into the middle of the muffin. if it comes out clean, this means that the muffin is cooked all the way and it's safe to remove them from the oven. However, if there is batter on the knife or toothpick, you know that you need to give them a few more minutes in the oven.

    Can you freeze muffins?

    You can! This is a great way to meal plan and get ahead. Once the keto apple muffins are baked, you just have to add them to a freezer-safe bag or container and store them in the freezer until you're ready to thaw them out to enjoy.

      I made this muffins because I’m am doing the low carb diet. I just don’t like the taste of almond flour and coconut flour baked goods. I wish I did because I love sweets. The muffins were pretty but they weren’t for me.

        Hi Donna, there is definitely a learning curve when adjusting your palate to baked goods with alternative flours. In the meantime, I'd suggest trying some cheesecake or pudding recipes.

      Can anyone tell me the conversion on using just xylitol for this? I have an allergic reaction to stevia and so gentle sweet or the joy filled eats natural sweetner aren't an option for me.

        Yes, when just using xylitol you will want to use 1.5 times the amount listed.

          Hi! Thanks for your recipes. I have never done a Keto diet but I am trying to make some meals for a friend who has cancer who does the Keto diet. I’ve taste tested the recipes first and been very impressed. As a major fan of carbohydrates, I have been pleasantly surprised.

          Time to try a Keto dessert!

          Would you happen to know how much Monkfruit with erythritol would be used in this recipe? The ratio on the bag says 1 cup of Monkfruit with erythritol to 1 cup of white sugar.

        We just went apple picking while on vacation so I used Jersey Macs. But gala, granny smith, and golden delicious would all work. Any type of apple that holds its shape when baking. Macintosh, for example, are too soft.
